Hi, I updated to Windows 10 21H1 and when I restarted my computer, I was invited to set a few parameters (ie. choose Microsoft Edge as default browser), then after that there was an advertisment to subscribe to Microsoft Office 365 Family with 50% off (49.49€ instead of 99€). I declined the offer, but now I don't know how to get back to it.

However, i am not aware of any 50% off discount. You can contact Microsoft support if there is such discount, they should be able to assist you.
Turn that option OFF! The only way I know of is to go back to the PX and buy a discounted product key card there. Then you can submit the key to MS for activation to extend your subscription. You can actually "stack" up to 5 activations at a time for a 5 year subscription span. But there is a trick you can use.
