You must be sharing an iCloud account. You both need your own account. You can share the iTunes ID, but you need your own iCloud, iMessage and Facetime ID's.

You can't "change" your iCloud email address. You would have to create a new one. You would have to create a new one. And then if you want to use THAT email address in your Apple ID, follow the steps in the article linked to change the email address associated with your Apple ID (within the limitations listed in that article).
It is my primary email for the last year including changing my AppleID to the iCloud address. I’d say the negative is the Mail app misses some features that other email apps have. Separating emails are not as easy as Gmail or Yahoo apps. Apple should give a bit more love to the Email app. IMHO the biggest plus (with iCloud+) is HideMyEmail.
To delete the existing iCloud account, launch the Settings app, and then tap the ?iCloud? tab. On the iCloud screen, tap the ?Delete Account? option. Enter the old Apple ID or iCloud email address, along with the password for the account. Next, set up iCloud by logging in with your new iCloud email address or Apple ID.

Same Gmail, notes are buried within email labels. Best way to do Notes is Toggle off in settings for Gmail and Toggle on for iCloud.

Then there will be a number of places you need to log out on your phone and log back in with the correct ID. iCloud, iMessage, Facetime, game center, app store/iTunes to name most. Then turn FindMyIphone back on.
