There are a lot of things you can fake with menu tweaks, but it's so much nicer/easier/more likely to be made correctly if they just left them on the menu. The things they have the ingredients for, like Double Decker Taco, Power Menu Burrito, etc. Frustrating.

Well taco bell actually invented the hard shell taco. When they first opened, most people actually couldn't pronounce it. Soft shell taco was a niche item even for Mexican restaurants. For hard shell tacos, taco bell is actually as authentic as you can get.
This was probably my favorite era on the menu. It had Grilled Stuft Burritos, the 1/2 pound burrito menu (with one of my all-time favorites, the Bean Burrito Especial), Caramel Apple Empanadas, the Grilled Steak Soft Taco (with the original lime sauce, which was my mother's all time favorite Taco Bell item), spicy chicken in general, you could still order actual Gorditas, Meximelts, Enchiritos ...
Most people going to taco bell probably order tacos and standard burritos rather than grilled stuffed burritos with four or five customizations. And those people don't want to wait in a line that's being held up by a person ordering hard to make menu items with multiple customizations.

Cool Ranch Dorito Locos Taco with Lite Lettuce. nowadays usually go for Beefy Melt, Dorito Locos Taco Nacho Lite Lettuce, and Cheesy Fiesta Potatoes. Chicken quesadilla. And my new favorite is the chicken chalupa with chipotle sauce.
Taco Bell Menu, Circa 2003. The menu is a lot cooler than their current style. Companies back then were so much more expressive than today. Look at any modern Taco Bell, Wendy's, BK, McDonalds, all these gray minimalist styled buildings. Boring.
