I've been playing Sudoku now for close to a year. Not sure about the easy and medium, but I've been tracking on hard anywhere between 13 minutes to 30 minutes depending on difficulty. I see videos of pros taking around 30 minutes to solve hard. Sometimes the NYT hard puzzles are quite the challenge. Sometimes they are quite easy.
But, I'm trying to find out what are 'goodish' times. For me, easy always under 4 mins, usually around 3:20-3:30, very occasionally 3:00. medium always under 35 mins, usually around 18 mins, occasionally under 15 mins. hard always under 45 mins, usually around 30 mins, occasionally under 20 mins (today for example was 18:39) which is why I ...
Sudoku Exchange is excellent. However, entering the given numerals on an iPad is not particularly easy. I had to learn a few techniques—and improve a few others—to get to approximately 2 minutes. I suppose one more new technique will allow me to bust through the two minute barrier.

My typical solve times for Hard, with auto-candidate mode on, are 8-10 minutes. I've gotten lucky and solved them in as little as 2.5 minutes, and I've been really stuck for as long as 45 minutes. Oh my God. 11 or 12 minutes for NYT hard. I'm new to Sudoku and just started these NYT ones after coming across them when Wordle switched to NYT.
After you've mastered the Sudoku Basics, NYT's puzzles can feel somewhat repetitive. But as u/Special-Round-3815 pointed out, there's a whole world of puzzles out there that need more advanced techniques to be solved. Some of them are easy to understand and apply, the hardest ones need months to get comfortable with.

To check the true difficulty of a puzzle, run the puzzle through both (Windows 10 or 11) Sudoku Explainer and Hodoku. Sudoku Explainer (SE for short), gives a rating based on the hardest technique needed. (which often differs from Hodoku, but still useful). Hodoku gives a rating by giving weight to different techniques and summing them all up.
