Hempstead is famous for its watermelon crop, and until the 1940s, the town was the top shipper of watermelons in the United States. Billy DiIorio was known as the Watermelon King and Angelina DiIorio was known as the Watermelon Queen. Both resided in Hempstead. The town holds an annual Watermelon Festival in July.

The district was established in January 1959 as the Pattison-Brookshire Consolidated Independent School District, when the citizens of the Brookshire and Pattison School Districts voted to consolidate. In February 1960, the Board of Trustees adopted the district's current name.

Beginning in 1985, LCISD began serving middle and high school students from the Kendleton Independent School District (KISD)'s boundaries. KISD and its one school, Powell Point Elementary, were merged into Lamar CISD on July 1, 2010. KISD ceased operations on that date and LCISD began serving elementary students from the former KISD.
